Melt In The Middle Chocolate Pudding

Serves 6, 20 minutes Preparation, 10-15 minutes Cooking 

Melt-In-The-Middle Chocolate Puddings are also called Molten or Lava Cakes, due to the rich and piping hot melted chocolate centre, which flows out of the cake onto your plate. Richly decadent, our recipe will show you how to make this indulgent pudding which is a volcano of flavour!

Ingredients:

  • 100g Unsalted Butter (and extra for greasing)
  • 6 tbsp Cocoa Powder, for dusting
  • 100g Light Brown Sugar
  • 50g Caster Sugar
  • 4 Large Eggs
  • 1 tsp Vanilla Extract
  • 100g Plain Flour
  • 150g Dark Chocolate

Method:

  1. Preheat the oven to 200oC/400Of/ Gas mark 6.
  2. Lightly grease 6 ramekin dishes or small, round baking dishes with the extra Butter, and lightly dust each with 1 tbsp Cocoa Powder, and set aside.
  3. In a small bowl over a pan of boiling water, melt the Chocolate and Butter together until smooth.
  4. In a separate bowl beat the Eggs and add in the Sugars and Vanilla Extract, and mix until smooth and creamy.
  5. Add the egg mixture to the chocolate bowl, then sieve in the Flour and fold in until fully combined and the mixture is light and airy.
  6. Pour the mixture evenly into the ramekin dishes.
  7. Place the ramekin dishes onto a baking tray and place in the oven.
  8. Cook for 10-15 minutes until the top has darkened but it is still spongey to touch. 
  9. Once cooked, remove from the oven and allow to cool slightly.
  10. To serve, carefully ease the pudding out onto a plate. 
  11. The middle should resemble melted chocolate inside once cut into.
  12. Serve plain, or with cream, ice cream, raspberries, or any toppings of your choice.
