Caramelised Chilli Nuts

Serves 6, 5 minutes preparation, 10 minutes cooking

These sweet and hot nuts are perfect for serving at a party and the fact that they are delicious and home made will really impress your guests!


  • 300g mixed Nuts – Pecans, Cashews, Almonds and Brazil Nuts work really well
  • 30g Sugar
  • ½tsp Cayenne Pepper
  • Leaves from 2 Thyme Sprigs
  • 60g softened Butter


  1. Add the butter to a large pan and melt over a medium heat. When the butter has melted add the sugar to the pan followed by the nuts then the cayenne pepper and a little salt if you like. Fry for 5 minutes to coat the nuts in the cararelised sugar mix then add the thyme leaves and fry for a further 2 minutes.
  2. Set aside for 5-10 minutes to cool a little then serve.
