Pitta Pockets

Serves 4, 10 minutes cooking, 15 minutes preparation

Inexpensive, quick and easy to make and, most importantly, very yummy!  What more do you want for a fun filled pack up for all of the family!

Ingredients

  • 2 honey-roasted skinless, boneless chicken breast halves
  • 1 white pitta bread
  • 2 cups shredded lettuce
  • 1 large onion, chopped
  • ½ cup gratted cheddar cheese
  • ½ cup mayonnaise
  • ½ cup ketchup
  • 1 tea spoon lemon juice
  • ¼ tea spoon ground black pepper

Method

  1. Preheat oven to 250 degrees F (120 degrees C).
  2. Heat pitta breads in preheated oven for about 5 minutes, or until slightly browned.
  3. Meanwhile, in a large bowl combine the chicken, lettuce, onion, cheese, mayonnaise, ketchup, chili sauce,  pepper sauce, lemon juice and ground black pepper. Mix well. If you fancy spicing things up for the adults, why not add a dash of Tobasco?
  4. Slice hot pitta breads around the edges to form pockets, fill bread pockets with chicken mixture.
